How I Came to Recommend Cold-Processed Dark Chocolate as a Health Food

For several years I have heard of the health benefits of dark chocolate and never looked into it seriously. I guess I thought how could something that tastes so good be good for me as well. In fact most processed chocolate is not healthy and the health disadvantages of the added sugars, caffeine and oxidized fats outweigh any benefit of the cocoa in the product.

In the past few months I started realizing how my clients must feel when they see me. I ask them to stop eating and drinking almost everything they truly enjoy: sweets, alcohol, coffee, breads, etc. and give them a program that although is healthy and potentially delicious is notably devoid of any pure pleasure foods. My thinking was that I am hired to help my clients improve their health not get pleasure from food and I have many years of experience with designing diet plans that help support healing in the body I don't want to jeopardize the health of my clients in any way. Yet still I felt some sadness when I printed up my client's diet plan with almost all truly enjoyable foods listed as RED AVOID.

Over the holiday season I came across a gentleman named David who was offering little square and round pieces of dark chocolate to me and my friends after a lunch at the Ashland food co-op. He started talking about the health benefits of chocolate and then proceeded to pitch me on selling it. At first I was turned off but then I started listening and realized that I should keep an open mind. Of course the chocolate tasted great and I decided to investigate the dark chocolate research and his company's chocolate in particular.

What I found was that raw, unprocessed cacao from which this chocolate product was produced was in fact packed with anti-oxidants and it was the processing of the chocolate and the addition of other less than optimum ingredients that left most chocolate undesirable as a health product. The chocolate that David introduced to me was in fact incredibly nutritious and was combined with Acai berries and blueberries to make it a virtual powerhouse of anti-oxidants. In fact one six gram square of dark chocolate had a Brunswick lab certified ORAC score of 3,582 – this meant that twelve grams almost equaled the ORAC score of a 12 gram serving of my superstar NanoGreens™.

How could this be? Well, Acai berry happens to have the highest gram for gram ORAC score of any single food tested by Brunswick labs and raw cacao is in the top 10. It was interesting to find that no other chocolate product on the market has a third party ORAC score certification of their finished product – some may test the raw material before processing but once the product has been processed it loses up to eight times the anti-oxidants of the raw cacao.

One six gram square of this Xocai dark chocolate had a Brunswick lab certified ORAC score of 3,582!

The product I now offer my clients, if they want a healthy treat, is the chocolate David introduced to me over Christmas. It's called Xocai which is a blend of the Aztec word “Xocolatl” for their drink made from raw cacao and Acai berry the dark, antioxidant rich berry which grows in the Amazon rainforest. Because Xocai's protein bar contains soy protein isolate I don't recommend it to my clients, but the other products I fully endorse.

Antioxidants: The Key to Vibrant Health in 2008

Hi Everyone,

I'm very excited about 2008 for many reasons including the expansion of my practice to include other modalities and tools for supporting healing and rejuvenation which I will be sharing with you over the next few issues of my newsletter. In this issue I will cover the following:

  • The importance of antioxidants in your diet in slowing down the aging process and supporting rejuvenation
  • How antioxidant potency is measured and applied to foods and supplements

It's been about six months since I opened my office in Ashland, Oregon and I have realized that at least half of my clients live out of state and I advise them on health and nutrition matters by phone. It is for this reason that I want to ask my readers for support in passing along my newsletter to family, friends and associates who you feel, may benefit from the information in the newsletters and/or my personal counseling.

It has been my experience that close to 90% of health problems can be resolved with nutrition and detoxification. Time and time again I have seen clients who have problems like: acid indigestion, eczema, constipation, chronic fatigue, headaches, allergies, sub-clinical depression or anxiety, and other common symptoms that get resolution just by applying simple, common sense nutrition solutions. These common sense solutions are only obvious to someone who understands how the body functions and how nutrition and toxins affect the body.

It was because I saw how simple these solutions were that I decided to train more people to be nutrition coaches. It is not necessary to go to naturopathic or chiropractic school to help people solve these basic biochemical imbalances. Often all that is needed is to provide people with the essential nutrients they need and for them to stop consuming things that cause the problem - at least for a while.

Anti-Aging and Rejuvenation Programs

Why is it that we age? There are many theories on the topic but the one that makes the most sense is that the accumulation of toxins and lack of nutrients to protect our cells lead to an increase in free radicals in the body which in turn damage cells, tissues, organs and glands. Everything from wrinkles and age spots to heart disease and cancer is caused by too many toxins and not enough nutrients.

We've all heard of the term “free radical” well what is a “free radical”? Chemically it is a molecule that is missing an electron in its atomic structure and is seeking to take electrons from other substances to re-establish atomic homeostasis. Unfortunately in the process of doing this your cells, tissues, organs and glands are damaged, and their function is impaired - that is what is called aging.

Free radicals are also a natural by-product of the body turning food into energy (ATP). The body does have mechanisms to deal with these free radicals, because they are highly dangerous if not neutralized. Glutathione and Super-oxide dismutase are two cell generated antioxidants that your body makes on its own if given the proper nutrition.

Excess free-radical production beyond the body’s ability to neutralize it is a big problem because these free radicals attack the body itself, damaging key cellular molecules such as DNA. Cells with damaged DNA may be more prone to developing cancer. Free radical activity is a cause of premature aging, heart disease, arthritis, cataract formation, chronic fatigue syndrome and many other degenerative diseases and health problems.

The most common causes of excess free radicals are:

  • Smoking
  • Frying food
  • Infections
  • Stress
  • Chemical and heavy metal toxin exposure – which are ubiquitous in our environment
  • Radiation exposure including EMF exposure from cell phones and computers

Antioxidants are nutrients that neutralize free radicals by donating electrons to the unstable free radical molecule’s molecular structure. Certain foods are exceptionally high in antioxidants and should be included in your diet. It is recommended that we all consume 10-14 servings per day of fresh, organic fruits and vegetables to neutralize the free radicals we are exposed to in modern society. Because of the difficulty of doing this I recommend taking additional whole food supplements to support our antioxidant levels we receive in our diets.

Dietary Sources of Antioxidants

Dietary sources of anti-oxidants include fruits and vegetables, raw nuts and seeds, raw dairy products and cold processed oils. As with all foods the nutrient content of these foods is dependent upon the quality of the food, soil conditions, amount of processing or heating the food has undergone, whether the food has been irradiated in the shipping process, and the elapsed time from harvest to ingestion into the body. Because the amount of toxicity we are exposed to in modern society has been increasing over the years and the nutrient levels in food has been decreasing it has become necessary to add dietary supplements to our diet to provide the nutrition, especially anti-oxidants, we require to maintain health. The following is a list of the most common anti-oxidants and good dietary sources:

  • Vitamin C -- Also called ascorbic acid, vitamin C is a water-soluble vitamin found in all body fluids, so it may be one of our first lines of defense. This powerful antioxidant cannot be stored by the body, so it's important to get some regularly. Important sources include citrus fruits, green peppers, broccoli, green leafy vegetables, strawberries, raw cabbage and potatoes. Often these food sources are insufficient due to Vitamin C’s tendency to degrade over time. This is why I have all my clients take one of three whole food supplements sources of vitamin C: Acerola, Camu Camu, or Amla.
  • Vitamin E -- A fat-soluble vitamin that can be stored with fat in the liver and other tissues, vitamin E is promoted for a range of purposes -- from delaying aging to healing sunburn. While it's not a miracle worker, it's another powerful antioxidant. Important sources include wheat germ, nuts, seeds, whole grains, green leafy vegetables, vegetable oil and fish-liver oil.
  • Beta-carotene -- The most studied of more than 600 different carotenoids that have been discovered, beta-carotene protects dark green, yellow and orange vegetables and fruits from solar radiation damage. It is thought that it plays a similar role in the body. Carrots, squash, broccoli, sweet potatoes, tomatoes, kale, collards, cantaloupe, peaches and apricots are particularly rich sources of beta-carotene.
  • Selenium -- This mineral is thought to help fight cell damage by oxygen-derived compounds and thus may help protect against cancer. It is best to get selenium through foods, as large doses of the supplement form can be toxic. Good food sources include fish, shellfish, red meat, grains, eggs, chicken, garlic and brazil nuts. Vegetables can also be a good source if grown in selenium.

Although most of us are aware that anti-oxidant nutrients like vitamins A, C and E, minerals such as selenium and carotenoids like lutein, lycopene and beta-carotene are potent anti-oxidants we don’t really know how much of these we need or are getting in our diet. I address the issue of how much one needs by assessing a person individually by looking at their live blood which will literally show us what percentage of red and white blood cells have been damaged by free radicals and by looking at their dry blood which will show the overall system oxidative stress a person is experiencing. Since antioxidant levels in foods can vary so greatly most nutritional aware health care practitioners emphasize providing an insurance of antioxidants and other nutrients with high quality dietary supplements. I have a two-tiered approach to anti-oxidant supplements starting with whole food supplements initially and next using higher quality, more biologically active isolate supplements if needed. But which ones are the most effective?

ORAC and What It Means

Since the actual anti-oxidant capacity of foods and supplements is of vital importance in protecting your health from free-radical damage it became necessary to find a way to measure these levels in foods and supplements.

Since1997 Brunswick Laboratories, an independent research laboratory located in Norton Massachusetts, has led the way in testing foods and supplements for their antioxidant levels. The primary measurement used was the oxygen radical absorbance capacity (ORAC) of a food or supplement. The higher the ORAC score of a food or supplement per gram the more effective it is at protecting your cells from oxygen radicals and thereby reducing your risk of degenerative diseases like cancer and heart disease and at supporting your cells to regenerate and function well. The following is a list of the top anti-oxidant rich foods and their ORAC score per 100 grams:

ORAC and Dietary Supplements

When it comes to dietary supplements I am always on the lookout for whole food supplements that are packed with antioxidants, vitamins and minerals and that tastes great. In general I believe in whole food supplements because of the synergistic benefits one receives from the combinations of nutrients in a whole food over the isolated nutrients in a synthetic supplement.

For the past two years I have been using in my practice a whole food supplement called NanoGreens™.
